Key Accountabilities
Optimal and timely delivery of preparation with strong attention to details
Supervises the preparation and cooking of food, organizing the work groups by assigning the commis di cucina various tasks
Coordinates the preparation methods for both cooked and raw foods, various types of cutting, filleting, marinating, and cooking methods for the different products, confectionery, the appropriate use of aromatic herbs and spices
Assures the synchronization and efficiency of work in the kitchen.
Supports the Head Chef and the Sous Chef in the management of food orders of reference and the control of the supply of the pantry
Verifies the mise en place of the courses
